Edible vegan peanutbutter cookie dough

Do you ever feel like baking cookies just so you can eat the dough? Well I sure have been there and done that. Now you can have the cake and eat it too. Or at least the dough.

Super healthy and delicious edible vegan peanutbutter chickpea cookie dough recipe is coming right in your direction.

This recipe is in fact super healthy and not a grain of added sugar in site. Is that possible you might ask? Sweet stuff without sugar?
Yes indeed it is, yes indeed.

 

This recipe is:

  • Vegan
  • Gluten free
  • Free from added sugar
  • Naturally sweet
  • Takes 10 min or less to make
  • Only requries 5 ingredients

So why chickpeas? Is that really a good idea?
I think so at least. It’s full of protein and is a super versitile bean to use, it’s natural flavor makes it great to use for both baking and savoury food.

Will my kids eat it? THEY WILL LOVE IT! Just tell them it’s cookie dough and they will be over the moon of joy.

Recipe for edible vegan peanutbutter chickpea cookie dough

Ingredients:

  • 250 grams of chickpeas
  • 2 - 3 dates (depending on your sweet tooth, I used 2)
  • Half a cup of peanutbutter (1,5 dl)
  • Teaspoon of vanilla extract
  • A pinch of salt
Edible vegan peanutbutter cookie dough

Method:

  • Put all your ingredients in a mixer
  • Mix untill smooth, make sure that you stop and scrape down the dough from the sides
  • Add a little water if you don't get a smooth dough, if it forms into a ball you are done

Now enjoy! Eat all at once, as a snack, with your loved ones or hide in the closet and eat all for yourself.
