Did anyone say Coconut Banana Pancakes? Well I did for sure, when not knowing what to make for breakfast pancakes is the only safe card to play.

When I first started my vegan journey I had a hard time being creative and there was a lot I thought I missed out on. Pancakes was a huge part of it since it was a big part of my comfort food menu.

Now I know that you never miss out on anything when you go vegan. You can do a vegan version on everything that is out there. It’s all about creativity and being a little experimental. Plus pre-made vegan options is coming out like never before.


You see as a vegan your start to see that the world is full of possibilities. All you need to do is explore. And by exploring and experimenting I came up with these beautiful Coconut Banana Pancakes. 
They are truly a breakfast for the entire family and super healthy.

Coconut Banana Pancakes that is:

  • Vegan
  • Gluten Free
  • Allergy friendly
  • Packet with protein

Recipe for Coconut Banana Pancakes

Portions: 9 small pancakes


  • 1 small banana
  • 1 dl of oat flour
  • 1 dl of coconut flour
  • 1,5 dl of oat milk
  • 1 tsp of baking powder


  • Add all your ingredients in a blender
  • Mix untill you get a thick smooth batter
  • Fry with coconut oil on medium heat for around 4 minutes on each side.

Serve with chocolate hummus (recipe), berries, chopped chocolate and puffed ammaranth.
