Cashew bliss balls with pink pitaya. Who could have thought of something like that? Well I did. You know I love my snacks and having something easy to make that also taste good always brings me into a good mood.

And it’s raining today so I thought I would brighten up the day a little bit with these color bombs :).

Why cashew bliss balls with pink pitaya?

So if you are in need of a quick energy boost or just want to make something fun these bliss balls are perfect for you. And since they have an amazing color they make a perfect addition on the picnic table or as a healthy dessert on the next dinner party.

Recipe

Portioins: Around 10 balls

Ingredients:

  • 90 gram dates
  • 80 gram cashew nuts
  • 1 tsp of Raw Nice pink pitaya powder
  • Extra powder to roll them in

Method:

  • Mix all ingredients in a blender
  • Roll to little balls with around 1 tablespoon of dough in each ball
  • Let set for 20 minutes in the fridge
  • Roll inte the extra powder and even out with your fingers so the powder covers the entire ball.

Enjoy with your co-workers or grab as a quick snack on the go. Or all at once, as I do.
