Blueberry Ice Cream

Who can say no to ice cream? I know I can’t especially home made with just a few ingredients. 

As i’m writing this post Sweden is experiencing the worst drought and hottest summer in over 260 years. Fire trucks all over Europe is arriving to help with the wildfires. I wish I could send some of this ice cream to the fire figthers who is working around the clock to put out the fire. 


On a much more cheerfull note we have lot’s of sun and that means spending a lot of time on the beach. We are just about to make our way to the gym and them spend the rest of the day in the sun.

Blueberry Ice cream that is

  • Super easy to make
  • Just 4 ingredients
  • Only requires a few hours in the freezer

Are you ready for the recipe? I’m not going to hold it back for you any more so here your go =).

Recipe Blueberry Ice Cream

Portions: 4


  • 1 Cup of soy cream (the kind you can whip)
  • 0,6 cups of blueberries
  • 2 tsp vanilla sugar
  • 1 tsp coconut sugar


  • Whip your soy cream
  • When fluffy add the sugar and whip some more
  • Mush up your blueberries and add to your soy cream
  • Pour into a form or freezeble jar and let sit in the freezer for 3-4 hours
  • Stir the ice cream once in an hour to freeze even and keep some creamyness

Serve with some fresh blueberries and good companies. Or eat by yourself. It tastes just as good either way.
