So I found this recipe for blueberry swirl ice cream on the instagram page of nourishmybliss and I new instantly that I had to try it. It looked so delicious and so creamy so I just simply had to.
The best thing about it is that it’s so easy to make and it kind of taste like cheesecake. Which I really don’t mind.

So without further delay. Let’s jump straight to the recipe
Recipe blueberry swirl ice cream
Ingredients Ice cream
1 cup of soaked cashew nuts
1/4 cup of coconut oil
1/4 cup of maple syrup
1/2 cup of coconut yogurt
1 cup of plant milk
1/4 tsp of vanilla extract
The juice and zest of 1/2 lemon
Ingredients blueberry swirl
1 cup of frozen blueberries
1 tsp of maple syrup
Method
Blend all ingredients in a mixer untill completely smooth and creamy. This might take a while
While blending heat up your blueberries and maple syrup until completely defrosted
Pour your ice cream mix in a freezer friendly container and swirl the blueberry mix into it.
Place in freezer for 2-3 hours or over night
Make sure to let it sit out for 10-15 minutes before serving to become soft.
