Vegan coconut bars

I made these beautiful vegan coconut bars for the first time a little while ago and have been dying to share the recipe with you ever since. And today is the day!

These pretty pink delights can be yours in an instant. Really the recipe is so quick and easy to make!

Recipe vegan coconut bars

Portions: 4

Ingredients:

  • 100 grams of shredded coconut
  • 1 Tbsp maple syrup
  • 1 chia egg (1 tbsp chia seeds + 3 tbsp of water. Let sit for 15 minutes)
  • 0,2 cups of coconut milk
  • 1 tsp Pink pitaya powder from raw nice (optional)

Method:

  • Mix the pink pitaya powder with the coconut milk
  • Mix all the ingredients in a bowl
  • Line a bread pan with baking sheets
  • Put your mixture in to the bread pan and push against one side. You will get about half of the baking pan.
  • Press together so it gets nice and smoothe
  • Let rest in the fridge for 30 minutes
  • Cover with melted chocolate
